Trivium

2007 - St. Helena - Napa Valley Cabernet Sauvignon

Vintage 2007 began early, and without the cool spring and summer, harvest would have begun even earlier. Uncharacteristic for Napa Valley, the rain stopped after mid-March. A heat spike around Labor Day hinted at a quick harvest, but the balance of the season was unusually cool, allowing for full flavor development and unrushed harvesting and fermentation. We picked 6.6 tons from Les Ivrettes block of the Lewelling Ranch on September 10.

Harvested by hand into half-ton bins, the grapes were sorted, destemmed, placed in a small fermenter, and punched down two or three times a day for 19 days, reaching a peak temperature of 84˚ F. The wine was then drained, pressed, and barreled down, completing malolactic fermentation two months later. It aged 20 months in oak, 71 percent new and 87 percent French. Bottled after a gentle “bug-catcher” filtration, the wine may throw a light natural deposit, and it will benefit from decanting before serving.

The 2007 Trivium is brilliant deep ruby, with deep blackberry aromas, hints of tobacco and roasted chesnuts, plus Les Ivrettes’ typical stony terroir and grace notes of nutmeg, bayleaf and thyme. It’s nothing short of pure Cabernet expression. In your mouth the wine is both rich and graceful, with firm structure disguised by mouth-coating suppleness. The finish is long, plush and chocolatey. Expect Trivium to develop well in the bottle for years.
